Minestrone soup is a thick vegetable soup, and for its preparation you will need:
• 100 gr. leeks (white part)
• 1 stalked celery
• 1 small zucchini
• 1 small carrot
• a handful of green beans
• ½ sweet pepper
• 1 clove of garlic
• 200 gr. tomato
• 200 gr. canned beans in their own juice
• 100 gr. macaroni
• pesto sauce (from basil)
• 1 l. vegetable broth
• 1 tbsp. l. olive oil
• 100 gr. grated Parmesan cheese
• salt, pepper, bay leaf
Pour boiling water over the tomatoes, remove the skin, cut into cubes, cut other vegetables into slices. Heat the olive oil in a wide saucepan, fry the carrots, onions and peppers for 5 minutes. Add celery, garlic, zucchini slices, green beans, tomatoes and stew, stirring occasionally. Pour in the broth and cook the soup for about 15 minutes. Rinse canned beans with boiled water and add to the soup. Boil the soup again, add salt. Boil the pasta separately. When serving, add pasta, pesto sauce (1 tsp) and grated Parmesan cheese to a plate.
