Pavlova cake is a sweetness consisting of meringue, whipped cream and fruit. In Australia and New Zealand, tropical fruits are commonly used, and in the UK, raspberries are preferred. It was named after the famous Russian ballerina Anna Pavlova, who toured Australia and New Zealand in 1926.
There is also information that the author of the recipe was the chef Bert Sachet, who prepared it in 1935, during the period of robots at the Esplanade Hotel. It was made for a holiday, and was presented as a completely new dessert. Demonstrating it for the first time, the chef said: "Airy, like Pavlova." After these words, such a name appeared.
