Coupling marshmallow is a kind of loose Kolomna marshmallow. Due to special techniques that prevent apples from darkening, whipping not chilled, but hot apple dough until it cools down, muffin marshmallow acquires a special whiteness and a delicate nougat-like fruit taste.
Kolomna marshmallow is a traditional Russian delicacy, a symbol of the city of Kolomna near Moscow. Presumably originated in the Middle Ages, as one of the ways to store apple harvests. Belevskaya and Kolomna pastilles should be separated, since they are prepared according to different recipes.
