Gaspacho (Spanish gazpacho) - a dish of Spanish cuisine ("Mediterranean diet"), a light cold soup of mashed fresh vegetables; is prepared and served, as a rule, during the hot season. Usually does not contain animal products, therefore it is included in vegan and vegetarian diets.
There are several theories about the origin of the word gazpacho. Until the 15th century, Al-Andalus was home to Arabs, Mozarabs and Jews. During these very years the word “gazpacho” appeared. According to one version, the name of the soup comes from the Mozarabian word "caspa", which meant "leftovers". Since the remains of what was at home were used to prepare gazpacho. Another version says that the name comes from the consonant Hebrew word "gazaz", meaning "cut into pieces" or "crushed", that is, reflecting the process of cooking
