Quesadilla (quesaidia) (Spanish quesadilla; from queso, "cheese" and tortilla, "tortilla") is a Mexican dish consisting of a wheat or corn tortilla filled with cheese.
For quesadilla, the tortilla is folded in half, filled with cheese and fried in the heat or deep-fried until the cheese is completely melted. Traditionally, only cheese is used as a filling in quesadilla. It is also possible to add meat, choriso, vegetables, mushrooms, potatoes and other ingredients to the filling. Vegetable salad, guacamole, chili peppers, coriander and salsa can be served as a common side dish.
There is a variation of the quesadilla that uses two tortillas with a filling between them, like a sandwich. The dish is served cut into slices and is called "sincronizada" (Spanish sincronizada).
The main difference from similar dishes - burritos, chimichanga, enchilada - is that the tortilla is folded in half, rather than wrapped in the filling.
