Required: pork tenderloin - 700 g; bacon (sliced) - 150 g (6-8 strips); leeks - white part (10 cm); dried apricots - 10-12 pcs; garlic - 1 clove; mayonnaise or sour cream - 1 tbsp. the spoon; mustard (not spicy) - 1 tsp; spices for pork; salt pepper.

Preparation:
Chop the onion finely. Soak dried apricots in water for 30 minutes. Then drain the water.
Mix mayonnaise with mustard and garlic, passed through a press.
Make a deep longitudinal cut on the clipping, open the piece like a book.
Salt, season to taste. Lubricate the cut with mayonnaise mixture, sprinkle with chopped onions.
Insert dried apricots into the cut (whole). Wrap the meat in the bacon slices and place in a baking bag.
Bake in an oven preheated to 190 C for 50 minutes.
Tip: the juice released during the baking process can be poured into a saucepan, add 3 tbsp. tablespoons of cream and 1 tbsp. a spoonful of brandy, cook over low heat for about 10 minutes. When serving, pour the sauce over the meat.
