Translated from the Tatar language, "kalach" means "very appetizing". Such bread was baked in many regions, but it was the Saratov bread that became famous.
The famous kalach is distinguished by elastic dough and white airy crumb.
These rolls have been made in Saratov since the 19th century. Then Saratov was called the bread capital of the Russian Empire. It was only here that durum wheat, the White Turk, grew. Previously, such flour was worth its weight in gold in Saratov. Only one miller sold it.
