Mochi is a type of Japanese traditional flatbread made from rice paste. Traditional mochi uses certain varieties of rice, usually a glutinous mochiime. The rice is pre-boiled and then crushed to a paste and rolled into molds. The process of making mochi is called motitsuki. Mochi rice cakes are consumed all year round in Japan, but they are especially in demand on New Year's Eve. Mochi flatbreads are popular not only in Japan, but also in China, Cambodia, as well as Thailand, Korea and Hawaii.
